How to Attach Edible Wafer Sheets to Cakes

Edible wafer sheets are a decoration for birthday cakes and cakes for any occasion.

Before you start, distinguish wafer paper from a sugar sheet. Check the packaging for the material and instructions for your cake covering.

Follow these tips to attach edible wafer sheets to cakes.

  1. Identify the printed sheet and check that it is suitable for your covering: whipped cream, ganache, fondant and buttercream do not necessarily call for the same method.
  2. Prepare an even, level surface according to the product instructions. Before placing the sheet, check whether a particular adhesive or barrier layer is required.
  3. If the instructions call for glaze or piping gel on the back, apply it before placing the wafer, using the stated method and amount. Do not automatically treat a sugar sheet in the same way.
  4. Position the image once and press gently without sliding it. Remove any non-edible backing first.
  5. Finish the border with your chosen decorations without shifting or covering the image.

Can edible wafer sheets be eaten with the cake?

The part sold as an edible decoration can be eaten; remove any packaging film or backing. Here are the other common questions.

  1. How do you use edible wafer sheets? The sheets are ready to use; simply apply them correctly.
  2. How do I repair a broken wafer sheet? There is no guaranteed repair for every material. Check whether the manufacturer permits edible glue for that sheet; avoid experimenting with water or gel on the print.
  3. Why is my wafer sheet not shiny? A matt finish does not necessarily need fixing. Use a glazing gel only if it is specified for your sheet and print.
  4. Can the wafer sheet go in the fridge? Follow the storage instructions for both the decoration and the cake. There is no single number of hours for every sheet and covering; do not skip refrigeration needed by the cake to protect the image.
  5. Is it gluten-free? Check the specific product label and allergen information. The words ‘wafer paper’ alone do not establish whether a product is gluten-free.
  • Edible wafer sheets are useful cake decorations. Applying them may seem difficult, but a few simple precautions can help.

How to put a wafer sheet on whipped cream

  1. First check whether your sheet is suitable for whipped cream and needs a barrier layer: not all edible prints use the same method.
  2. If compatible, prepare the cream and apply the sheet as instructed, without sliding it.
  3. Finish the edges gently and follow the cake’s storage instructions.

Wafer paper without gelatine and on fondant

To attach wafer paper without gelatine, check which adhesive the manufacturer specifies for that sheet and a fondant covering. Do not automatically substitute water or glue for gel: sugar-sheet instructions do not necessarily apply to wafer paper.

How long before serving should you add the wafer?

Choose when to apply the sheet according to its instructions, the covering and the cake’s storage needs. Avoid a universal rule such as ‘a few hours’. If the instructions do not cover your combination, ask the supplier before preparing the cake.
