Ice cream without a machine: short answer
You can make ice cream at home without an ice-cream maker in three ways: blend frozen fruit, use frozen milk-and-cream cubes, or work the mixture in a chilled steel bowl. The first two methods are quick; for the manual method, stir about every 20 minutes for 5–6 hours.
A food processor or a blender designed for frozen ingredients makes an instant ice cream that is best eaten straight away. The bowl method takes longer but works with different flavours and can be stored until the following day.
Use a hand blender only with mixtures allowed by its instructions. Do not force it through hard cubes or fully frozen fruit unless the manufacturer says the appliance is suitable.

Homemade ice cream in a stainless steel bowl

This preparation is not as immediate as the others but has the advantage of being able to create an ice cream of any taste and allows to preserve it the next day in a container for ice cream.
So we will go to choose any recipe of ice cream that provides the use of the ice cream maker.
Prepared the mixture we will pour it in a bowl of stainless steel that we previously made to cool in the freezer.
Once the mixture is in the bowl put everything in the freezer.
At this point every 20 minutes you have to take the bowl and mix the content so as to break the ice crystals.
Continuing to do this job for 5-6 hours the ice cream should have the right consistency, so it can be consumed or preserved for the day after in a container for ice cream in the freezer.
If you have the ice creamer, everything is even easier, you can also use our own bases for ice cream made for both home and professional ice cream.
Blender, food processor or hand blender?
- Food processor: best suited to frozen fruit cut into pieces.
- Blender: works with frozen ingredients and a creamy component when the model is designed for them.
- Hand blender: better for softened mixtures; always check the appliance manual before processing hard ingredients.
Whichever method you choose, work quickly and serve instant ice cream at once, or use the manual bowl method for a firmer result.
Safety when a recipe contains eggs
