Sponge cake is the base of many layered cakes. Slicing it evenly may look difficult, but the process is straightforward when the cake is completely cool and you follow a level guide.
Whether you divide it into 2 or three layers depends on the height of the sponge cake.
Wait until the sponge cake has cooled completely before slicing it; we recommend preparing it the day before.
Here are two simple methods: the first uses a knife, while the second uses nylon thread or strong sewing thread.

How to slice sponge cake with a knife
For this method, you need a long, thin knife and a table knife.
Use the table knife to mark a level guide all the way around the sponge cake.
Insert the long knife and cut along the guide, taking care to keep the blade at the same height.
How to slice sponge cake with thread
To slice the sponge cake with thread (nylon or strong sewing thread), begin with the same level guide used for the knife method.
Mark the guide with the table knife, position the thread along it and pull the thread through the sponge cake until the cut is complete.

Storage
Sliced sponge cake can be kept in the refrigerator for 2-3 days. Wrap it in plastic film to prevent it from becoming hard.
