If you want to try cake design, learning to roll out sugar paste is an important step.

You will need a rolling pin and some icing sugar.

Take the block of sugar paste and knead it briefly with your hands to warm it a little.

Dust the work surface with a little icing sugar and use a rolling pin to roll out the sugar paste evenly.

Continue until the sugar paste is large enough to cover the whole cake. Choose the thickness according to your preference, aiming for about half a centimetre.

To imprint a pattern on the sugar paste, place an embossing mat on top and roll firmly over it with the rolling pin so that the pattern is impressed into the paste.

Dust the sugar paste with a little icing sugar, then wrap it around the rolling pin.

Unroll the sugar paste over the cake, taking care to cover the entire surface.

Use your hands to help press the sugar paste against the cake, taking care not to damage the imprinted pattern.

Trim off the excess sugar paste carefully, without damaging the covering. The cake is now covered.
