What is Isomalto?

Theisomalto is an alternative to sugar traditional, is obtained from beets through chemical processes of decomposing.

Unlike traditional sugar, it releases a quantity of glucose in the lower blood, in fact when it was discovered it was considered the sugar for diabetics.

The isomalto, however, owes its fame to the pastry shop.

In this field it has become unique in its kind to prepare compositions that seem made of blown glass.

Unlike other sugars it melts without adding other ingredients, it allows excellent processing and is transparent.

How to use The isomalto?

The first procedure is to dissolve isomalto, to do this you can use 3 methods, in casserole, in microwave or in oven on a sheet of food silicone.

We will now explain the procedure in the casserole but in principle the basic concept is always the same.

  • So, first of all, we pour a little isomalto into the casserole and put it on the medium flame fire
  • With the help of a kitchen thermometer, control the temperature, the isomalto begins to dissolve around 150°, but bringing it up to 180° you will have an optimal result.
  • At this point, when you reach the optimum temperature, turn off the fire and immerse the casserole in a bowl with water and ice to stop cooking.
  • To achieve the consistency in which isomalto creates filaments, it is necessary to carry it around the 130°.
  • All that remains is to create the decorations.

What can be created with isomalto?

An idea is to create grills, spirals or domes, taking isomalto with a spoon and dropping it into filaments over a sheet of food silicone, drawing and shaping it to taste and then let it cool so that it is compact.

Orange cake with Isomalto

Ingredients: 

type 00 flour g 300 
Isomalto g 200 
Green milk g 200 
Orange juice g 100 and zest
Vegetable margarine g 70 
Cocoa bitter g 50 
Painful g 30 
baking powder g 15 
Eggs 1 

Preparation: 
Let the margarine soften and smear it with a snower along with the isomalto, the sweetener, and the egg. 
Add the orange peel and milk; then the flour with yeast and cocoa. 
Last but not least, the orange juice is filtered.
Pour the whole in a 24 cm diameter zipper mold, sprayed with detachment spray, or covered with baking paper.
Cook at 180° C, for about 40 minutes.
