Milk powder in baking: short answer
Milk powder for baking is dehydrated milk used as a dry pastry ingredient. It adds milk solids without adding more water and can be used in doughs, batters, creams and the preparations specified by a recipe.
Choose a food-grade product intended for cooking and baking. Infant formula is a different formulation and is not the ingredient discussed in this guide.
Dosage and reconstitution are not universal. Follow the recipe and the product label; the quantities later in this article apply only to the cake and reconstitution method described here.
The milk powder in commerce is located in 3 versions:
- milk powder whole with fat percentage around 26%
- milk powder partially skimmed with fat percentage between 13 and 15 %
- milk powder skimmed with fat percentage not less than 0.5%

The milk powder in domestic use can be used as an ingredient in bakery products and the use will allow to have softer products and cooking will be facilitated.
Also using the milk powder in the dough it will be easier to manage the consistency of a dough avoiding that it remains too liquid.
If you use it as a drink, the milk powder has a much longer expiration than traditional milk and therefore is much more convenient to manage.
To recreate a liquid drink liter just add 100gr of milk powder 900 g of water.
Recipe Soft cake with milk powder for pastries
Now we see a simple recipe with the use of milk powder for desserts
Ingredients:
- 50 g of maizena;
- 50 g skimmed milk powder;
- 2 eggs;
- 125 grams of white thin yogurt;
- 6gr of baking powder;
- aroma of choice;
Proceedings:
- Take the egg whites and mount them until stiff with a pinch of salt.
- At this point in a container we put the other ingredients and we mix to join them.
- So let’s add the egg whites mounted until stiff gradually and gently kneading the ingredients, taking care to mix from the bottom upwards to not disassemble the egg whites.
- Cook in a 24 cm diameter cake bowl and in a preheated oven at 160° for 20-25 minutes.

How to use milk powder in doughs and batters
- Weigh it as a dry ingredient and distribute it evenly with the other powders.
- Do not automatically replace flour or liquid milk at a 1:1 ratio.
- When reconstituting it as a drink or liquid ingredient, follow the proportions on the label first.
This keeps its technical use in baking separate from the cake recipe and from simple product reconstitution.
